The ultimate holdouts against commercialization. For 75+ years every legally required detail was printed on the bottle cap — no label — until modern food-safety law forced their hand in 2022. As the Father Abbott put it: "We are not brewers. We are monks. We brew beer to be able to afford being monks." The scarcity isn't marketing; it's a religious boundary.

The founding thesisMonks from Mont-des-Cats joined the hermit Jan-Baptist Victoor in the woods of Westvleteren and needed to be self-sufficient — cultivating fields, making cheese, and brewing small batches for the community.

1. 1838
   Abbey founded

   Monks establish Saint-Sixtus and begin brewing for the community.

2. 1839
   Brewing license

   Received from King Leopold I for 25.45 Belgian francs.

3. WWII
   The copper survives

   The only Trappist brewery to keep its original copper vessels — spared because it served as a hospital for Allied troops.

4. 1946–1992
   St. Bernardus era

   Licensed the nearby St. Bernardus brewery to brew its beer; revoked in 1992 to keep everything inside the abbey walls.

5. 1999
   Line reshuffle

   The dark '6' and light '4' retired; the Green Cap Blond introduced.
