Géronimus Hatt opened a brewery called Brasserie du Canon in Strasbourg in 1664. Flooding pushed the family up onto higher ground in the 1850s, into a district called Cronenbourg — and in 1947, the eighth generation of Hatts renamed the whole company after it, swapping the C for a K purely because German spelling sounded more prestigious to beer drinkers of the era.
