Type: Founded in 1864 by Joh. H. Zolliker, expanded under Wilhelm Schübel from 1873, then passed through Karl Stolz and later operators. Bernhard Ullmann became sole owner in 1901, added mechanical cooling and used the Bavaria name. In 1904 Bavaria and Gambrinus formed Vereinigte Brauereien Zürich, which merged into Union-Brauerei the same year. Status: CLOSED AS Independent brewery — CONSOLIDATED 1904. ZOLLIKER → SCHÜBEL → Stolz/others → ULLMANN → Union network Independent Bavaria production ended through consolidation; exact physical last brew date within 1904 remains held.
