Founded in 1996 by Daniel Thiriez in a former brewery at Esquelbecq, in French Flanders. Disproportionately influential abroad: Thiriez's dry, highly attenuated farmhouse ales became a reference for American brewers rebuilding saison, and its house yeast has been propagated commercially well beyond France.
