Tally's Take

Why this matters

Brewing over a spring-fed limestone cave system since 1859, in a Bruce County village of a few hundred people that most Ontarians could not find on a map. It is one of the oldest brewery sites in Canada and the water still comes from the rock underneath the building. Nothing about this brewery is a marketing reconstruction of heritage — it simply never stopped being where it was.
