1. 1859
   Henry Huether's Crystal Springs Brewery

   "The history of our brewery began in the year of 1857, when Henry Huether came from Germany to the town of Neustadt, Ontario. He founded the Crystal Springs Brewery in 1859 which was built over a natural spring."

2. 1869
   Rebuilt in fieldstone by forty German masons

   "In the early 1860s, a fire destroyed much of the wooden structure. Forty stone masons were then brought over from Germany to rebuild the brewery. Local fieldstone was brought in by farmers in exchange for beer. By 1869 it was ready to begin brewing again." The building also held a ten-bedroom hotel, a stable and a hay loft; the small stone building to the north was the customs and excise office.

3. 1916
   Closed — a shrinking village and prohibition

   "The brewery closed its doors in 1916, due to the decline of the local population and also the beginning of prohibition in Canada." Afterwards "the old Neustadt Creamery, an egg grading station, the Neustadt town hall, a farmers market and even a dance hall".

4. 1997
   Reopened as Neustadt Springs Brewery

   "After remaining vacant for a number of years, the old brewery building was sold and reopened as Neustadt Springs Brewery in 1997." The buyers' names (reported as Val and Andy Stimpson) are not on the company's page: UNKNOWN here. It is "reputed to be the oldest operating original brewery building in Ontario" (Historic Places Days).

5. 2021
   Sold to Mike and Anita Weber

   "In July 2021 it was resold to new owners, Mike and Anita Weber" — not 2019. A formal heritage designation: UNKNOWN (none found).
