Why this matters

The most instructive failure in American brewing, and it now has an ending. Schlitz changed the beer to save money, and the public worked it out within a few years. What Pabst held at the end was a licence rather than a brewery — the company that made it had been gone since 1982. The last Schlitz ever brewed was made to the 1948 recipe, the formulation from before any of the shortcuts. A brand spent fifty years failing to outrun a decision, and the only way anyone could think to say goodbye to it was to undo that decision for eighty barrels.

No. Joseph Schlitz Brewing Company has closed. Once the largest brewery in the world, and the origin of the slogan The Beer That Made Milwaukee Famous. In the 1970s Schlitz shortened aging and altered its process to cut costs; ahead of expected FDA ingredient labelling it swapped silica gel for Chill-garde, which is filtered out before packaging and so would not need declaring. Chill-garde reacted with the Kelcoloid foam stabiliser and coagulated protein into visible white flakes. More than ten million bottles were recalled in 1976. Stroh bought the company in 1982 for around $500 million; the brand later passed to Pabst. Pabst ceased production in 2026 — the final batch was brewed on 23 May 2026 by Wisconsin Brewing Co. at Verona, Wisconsin, eighty barrels made to Schlitz's own 1948 specification, and released that June. 177 years.
