What we have established
Type: Historical wine and brewing company / production brewery. Status: HISTORICAL - PRODUCTION VERIFIED 1896; LIFECYCLE ENDPOINTS UNKNOWN. Pass 153: the cold-storage site chronology is substantially tighter. Aldrich's 1892 county history says Hammondsport Vintage Company transferred from its Canal Street concrete building to the newly built 'Cold Storage block.' A later Penn Yan civic history says the same company's plant was in the Fall Brook cold storage building on Seneca Street in 1894. This same-company continuity strongly supports the hypothesis that the 1892 Cold Storage block and 1894 Fall Brook building were the same continuing facility, but exact legal/parcel identity remains PARTIAL. The 1899 newspaper separately verifies 'T. S. Burns' brewery' expanding in 'the cold storage building'; no source yet explicitly joins Burns to the Fall Brook facility or formally equates the 1899 operation with the 1896 T. S. B.
