For-profit certification programme for the hospitality and beer-selling trades, founded by Ray Daniels, covering draught system design and maintenance, beer storage and freshness, styles, off-flavour identification and food pairing. Four ascending levels from Certified Beer Server to Master Cicerone, the last held by only a small number of people worldwide. The name is a registered trademark.

Why it matters
It exists because beer arriving at a customer in poor condition is usually the bar's fault rather than the brewery's — a whole profession built on the gap between what was brewed and what gets poured.
