The character

Every brewery in this city works in the shadow of one building. St James's Gate has brewed since 1759 and for most of that time Dublin beer meant Guinness and nothing else. The modern scene grew up in industrial estates on the ring road — Ballyfermot, Inchicore, Glasnevin, Ballymount — making session IPAs and barrel-aged sours for a city that took a long time to admit it wanted them. Several of them have no taproom at all, which tells you what Dublin commercial rent does to a brewery.
