The character

The east and midlands, where Irish brewing is quietly most agricultural. Laois has two estate breweries growing their own barley — one on a farm held by the same family since 1639. Carlow has been at it since 1996, before anyone called it craft. Kilkenny lost Smithwick's to Diageo and revived a name from 1702 to fill the hole. Good land, long tenancies, and a habit of brewing what the field produced.
