The character
Every brewery in the Yukon is in this one city, and the rest of the territory drinks what Whitehorse sends it — the Sourdough Saloon in Dawson, the bistro in Carcross. Four operations for 30,000 people: the 1997 pioneer that also distils, a modern taproom reclaiming its own fermentation CO2 because every cylinder otherwise comes up the Alaska Highway, a one-man oak-fermentation project, and a cocktail bar in a 1938 log cabin. At 60 degrees north, that is a remarkably complete beer scene.
